Our Recipe of the Day: In Honour of the NFL Bills: Buffalo Wings!

This is said to be the original wings recipe from the Anchor Bar in Buffalo, a classic place in the Queen City. This recipe comes from The Spruce Eats.com. Go Bills, go!

INGREDIENTS

  • 2 1/2 pounds chicken wings (12 to 16 whole wings separated into “flat” and “drummette” pieces)
  • Neutral cooking oil (such as canola or peanut or sunflower)
  • 1/2 cup Anchor Bar Wing Sauce (or Frank’s Hot Sauce with some butter, salt and pepper if you can’t get Anchor Bar)
  • For serving: blue cheese dressing and celery sticks

COOKING INSTRUCTIONS

Gather the ingredients.

Dry chicken wings with a paper towel.

Heat a large pot filled with 2 to 3 inches of the cooking oil to 350 F. Set the oven to warm. 

Gently place wings into the oil, making sure not to crowd the pot.

Fry for 10 to 12 minutes until they are golden brown and crispy.

Remove with a slotted spoon to a baking sheet and place in the oven to keep warm while you cook the remaining wings.

After all of the wings are cooked, transfer to a large mixing bowl. Pour the hot sauce over the hot wings and toss with a spoon or spatula to completely coat. 

Serve immediately with celery and bleu cheese dressing on the side.Serve immediately with celery and blue cheese dressing on the side.

TIPS

It’s not the classic method, but you can bake your wings in the oven if you want to avoid frying.
