Flora Farm’s Ultimate Rosemary Guacamole

A quick google search for guacamole recipes reveals lots of different variations … spicy, cheesy, charred and even fruit infused. But there’s one that Canadian Travel News made recently on a trip to Flora Farms in Los Cabos, a serene, 25-acre organic working farm located slightly north of San Jose del Cabo, Mexico in the foothills of the Sierra de la Laguna Mountains.
The secret ingredient? Rosemary. Yes, the herb usually reserved for potatoes and stuffed poultry was a flavour we had never thought to mesh with avocados, but it works beautifully. And since it’s an easy herb to find and work with, we thought we’d share this recipe we made, courtesy of the Cooking Classes at Flora Farms.
You’ll need:
4-5 ripe avocados
2 sprigs of fresh rosemary, chopped
1 serrano pepper
1 small garlic clove
Juice from 1/4 a lime
The original recipe calls to use a molcajete, which is a traditional mortar and pestle that you’ve probably seen in restaurants, to make a paste of the garlic, serrano and rosemary. But any mortar and pestle will do. If you don’t have one, you can very finely chop them on a cutting board until they form a rough paste and add to a medium-size bowl.
Into the molcajete, add the avocados and smash. Season with 2-3 good pinches of salt and one of pepper to taste. Squeeze the lime into the mixture.
It’s important to not add too much lime so the avocado flavours still shine through.
Serve immediately with chips.
